Apple Nachos

Apple Nachos are a fresh, sweet and crunchy treat that make a great after-school snack…or mid-morning snack at work for adults. They also make an awesome breakfast!

Hemp seeds are a complete protein and rich in omega 3 fatty acids, which will satisfy hunger and contribute to brain health. Walnuts also boast similar benefits.

I hope everyone had a great first day of school! I don’t know if this is everyones experience but my kids are always famished when they get home from school. Even if they have had a snack at after-school care, when they burst through those doors, it is as if they hadn’t eaten all day. This is something that I have come up with to keep their hunger at bay, while I make dinner and as a sneaky way to get them to eat hemp seeds and walnuts. Hemp seeds and walnuts are two nutrient dense but have strong flavours that can be a little off putting to kids in particular.  The honey sweetened almond butter sauce, coconut flakes and cocoa powder are more than appealing enough to get the kids to eat the hemp seeds and walnuts. I like these apple nachos with the chocolate flavour of the cacoa powder. If you wanted to make these a little more ‘treaty’ you could replace the cacao powder with chocolate chips.  If you wanted to spice this up for fall, cinnamon would be a great addition.

Apple Nachos
These delicious and nutritious apple 'nachos' are the perfect after-school snack: sweet, crunchy and filled with brain building omega three nuttiness.
  1. Cut each apple into 16 even slices.
  2. Warm the almond butter and honey in the microwave 30 seconds. Add the water and stir really well to incorporate into a smooth sauce.
  3. In a small bowl combine the walnuts, hemp seeds and coconut.
  4. Lay the apple slices on a plate and drizzle the almond butter mixture over the fruit. Top with chopped walnuts, hemp seeds and coconut.
  5. Dust the entire plate with cocoa powder.
