I love making spring rolls, and these avocado peach ones are the latest combination to rock my world. Fresh spring rolls are an excellent choice for days when its too hot to cook, for entertaining or for lunch. You can fill them with so many different ingredients. But for me the sauce is just as important as the wraps.
This version takes the sweet and seasonal peach as the star of the wrap. Paired with a rice noodle salad, smooth and creamy avocado this is a delicious wrap all on its own. However, adding some serious flavour to this wrap is the awesome almond dipping sauce. I dare you to try making this without dipping your spoon in it and start eating it like it was a soup!
This sauce could also be used to turn all of the wrap ingredients into an awesome noodle salad.
Wrapping the Spring Rolls: Step by Step Tips
Rice wraps are pretty easy to find these days in large grocery stores. They are usually found in the International aisle, or in the Asian Food aisle. Same with the rice noodles that are used in the dish.
To set up for wrapping your rolls: fill a pie dish about 2/3 full with hot water, dampen a dish towel and lay it flat on the counter and have ingredients sliced and ready.
- Dip a rice wrap in the hot water and submerge for about 15 seconds. You want to remove it from the water when it has a bit of structure left to it–you don’t want it totally limp.
- Lay the wrap flat on the damp towel.
