Chickpea Salad Sandwich
A fresh, crunch and satisfying sandwich filling. This can be used in a wrap, collar leaf or between bread. Chickpeas are a good source of fibre, protein, iron and zinc.
Prep Time15 minutes
  1. In a medium sized bowl mash the chickpeas with a fork until no full chickpeas remain.
  2. Add in lemon juice and mustard and mix thoroughly.
  3. Add in all of the vegetables and seasoning, and mix one final time to incorporate all ingredients.
