Creamy, Cozy, Cashew-Cheesy Cauliflower

The recipe title says it all. This alternative to Mac n’ Cheese is comfort food at it’s best. It’s creamy and cheesy but also has more health-promoting ingredients than the traditional dish. In place of pasta, I’ve used roasted cauliflower. In place of cheese sauce, I’ve modified my go-to cashew sauce, into a replica with dare I say, more flavour?

This dairy-free, gluten-free, low-carb, vegan dish will have you forgetting about all those labels. All you will think about as you eat it is “mmmmmm”.

Roasted Cauliflower
  1. Preheat your oven to 375F. While it is heating, prepare your cauliflower florets on a parchment lined baking sheet in a single layer.
  2. Drizzle cauliflower with olive oil and toss to ensure everything is coated.
  3. Sprinkle nutritional yeast over cauliflower and sprinkle with a pinch of salt.
  4. Place in oven and bake 15 minutes (or until fork tender--the bigger the florets the longer it may take).
  5. While the cauliflower is baking, add the sauce ingredients into a blender and blend until smooth and creamy. I use a high-speed blender for best results, you may need to add a little more almond milk if it is not mixing well--but add it 1 tbsp at a time.
  6. When the cauliflower is fork tender (but not mushy), place into a 9x9 baking dish and cover with cheese sauce. Toss gently to coat the cauliflower.
  7. Reduce oven temperature to 350F and bake for 15 minutes. You can broil the cauliflower for a minute or two after baking to caramelize the top.
