Honey Mustard Green Bean Salad

Green beans are a popular vegetable around our dinner table. Generally I serve them steamed with a sprinkling of himalayan salt and cracked black pepper. But this salad is worth veering off the course of tried and true.

It is a great option mid-summer when beans are fresh and in abundance.  Perfect served at a barbecue, to pack for a picnic or to add to your favourite salad bowl along side some quinoa, hummus and fresh herbs.

Try the honey mustard vinaigrette on all sorts of salads. It’s a versatile, easy and delicious dressing for grains, greens or vegetable salads.

Green Beans:

Green beans may seem like a boring, hum drum vegetable that you have to pick out of those terrible frozen vegetable medleys.  But I love fresh green beans and have made sure that my kids love them too, because they are very nutritious.

  • an excellent source of Vitamin K, which is important for bone and blood health.
  • a very good source of Vitamin C, fibre and folate
  • a good source of calcium, iron and protein

What’s really great is that they are a great vegetable to plant in your back yard, even if you don’t have a large plot of land, you can get the climbing variety and grow them vertically!

Ingredients
Bean Salad
Honey Mustard Vinaigrette
Instructions
  1. In a large salad bowl gently toss the green beans with the onion and walnuts.
  2. In a small bowl whisk together the remaining ingredients.
  3. Pour the vinaigrette over the bean mixture and mix to coat everything evenly.
  4. You can serve this right away, but it tastes even better if you let it set at least 30 minutes before serving(set in the refrigerator if longer than 30 minutes) .
