Slow Cooker Quinoa Chili

Even though the calendar shows that we are almost into Spring, it still feels decidedly Winter-like outside.

A staple recipe that I like to make for busy weeknights, or any cool-weather evenings is chili. This version is made in a slow cooker, so set it on low in the morning and it will be ready to serve by dinner.

 

 

 

 

 

When it’s time to serve, you can top your bowl of chili with any of these delicious garnishes:

  • wedge of fresh lime,
  • diced chili peppers,
  • chopped green onions
  • cilantro
  • guacamole or diced avocado
  • crushed tortilla chips

Personally, I’d go for the whole lot 🙂 Enjoy!

Instructions
  1. Add all of the ingredients into the slow cooker and stir to incorporate everything. Cover and set on low.
  2. Before serving, adjust seasoning by adding salt and/or pepper.
  3. Garnish and serve.
